Botulism – Scarier than Halloween

This is not your grandmother’s canned tomatoes.

Improper thawing of vacuum packed (Reduced Oxygen Packaging – ROP) frozen fish is a breeding ground for botulism.

The correct way to thaw frozen (ROP) fish is:

  • Cut or peel open the packaging. This step is critical. Botulism spores can form if the packaging is not opened.
  •  Thaw in the refrigerator, under cool running water, or as part of the cooking process.

Health Inspectors are seeing frozen vacuum packed fish thawing in unopened packaging.

The City of Minneapolis Health Department has a Health Inspector I (Food, Lodging and Pools) position open. Applications are due byMonday, October 26, 2015 at 11:59 pm Central Time.

The primary duty of a Health Inspector I (FLP) is to perform field inspections of food service establishments, pools and spas, daycare centers, lodging and boarding facilities, schools, suntan and tattoo parlors and other environmental health related environmental health issues to ensure compliance with public health standards and codes.

The position is a full-time, non-exempt and requires some schedule flexibility which could include some evenings and weekends. Fluency in Spanish, Somali, Hmong, Mandarin, Cantonese, Vietnamese and/or Laotian is highly desirable.

The minimum education requirement is a Bachelor’s Degree with a minimum of 45 quarter or 30 semester credits in a related science or equivalent.

Food Safety Basics training in Spanish

A free four-hour food safety training will review food safety and how to avoid problems commonly seen on health inspections. The training will be taught by Justo Garcia and Eduardo Mardones, bilingual City of Minneapolis Health Inspectors.

The training will review:

  • Proper handwashing  techniques
  • Food cold storage
  • Sanitizing
  • Food handling techniques
  • Avoiding cross-contamination
  • Proper cooking and holding temperatures

Two training sessions will be held (attend one):

  • Thursday, October 29, 9:00 am to 1:00 pm
  • Wednesday, November 4, 1:30 to 5:30 pm

Classes meet from 5:00 to 9:00 p.m. at the Midtown Global Market, lower level meeting room, 920 E Lake St Lower Level, Minneapolis, MN 55407:

Online Health Inspection Reports

At the end of September, the Online Health Inspection Reports work group met. The work group reviewed a draft of information about Health Inspection reports that will be put on the city’s website. The information will help readers understand the health inspection reports.

When the vendor for the city’s health inspection software completes their software upgrades, health inspection reports will be available on the city’s website. The Health Department does not have a firm date yet for health inspection reports to be available online.

MN Food Code revision update

A new draft Revisor’s version of proposed language for the Minnesota Food Code (Minnesota Rules, Chapter 4626) is posted on the rule revision website

Please use the “Proposed Draft Food Code Language Form” to suggest any changes to the draft language. Remember to include a reason for your proposed change, including why the change is needed and why it is reasonable.
